Raspberry Filling Homemade Chocolates

February 8, 2016

Valentine's Day is round the corner and there is no better way than to surprise your loved one with something homemade and something sweet. Here's a nice simple chocolate recipe combined with a creamy raspberry filling just for you :)

Ingredients (Yields 15-16 pieces)

1 ½ cups dark chocolate, grated

½ cup white chocolate, grated

1/2 cup heavy cream

¼ cup raspberry preserve

Edible golden dust for garnishing

  1. Place the dark chocolate in a microwave proof bowl and melt it in the microwave for 30 seconds (three 10 second bursts). Remove and mix it well with a fork

  2. Keep mixing the chocolate with a fork till the texture of the chocolate is smooth and no lumps remain

  3. Fill the heart-shaped chocolate moulds with melted chocolate, using a tablespoon. Tap gently on the kitchen platform to get rid of any air gaps

  4. Flip the mould to remove excess chocolate. You should be left with a thin coating of melted chocolate around the mould. Refrigerate it for 15 minutes

  5. To make the filling, put the white chocolate and heavy cream in a saucepan. Heat it on a low flame stirring continuously. Add raspberry preserve and combine well. Allow the mixture to cool for a while

  6. Fill the raspberry mixture in the centre of the already coated chocolate mould and tap them well

  7. Cover the raspberry filling with a thin layer of the leftover dark chocolate. Set to cool for a few minutes. Remove excess chocolate with the help of a knife

  8. Tap and remove the chocolates from the mould and lightly brush them with edible gold dust

  9. You can wrap the chocolates in coloured wrapping papers or serve right away.

Enjoy! :)
